Hey Everyone! We would like you all to meet the newest member of our herd! Miss Belle is always the first one to greet us at the milking barn and is a sweet new Jersey A2/A2 girl. It was a great weekend at Diamond S, as we had a few guests (Cassandra and Kirstie) came to visit and help in the shop! Together we created two batches of cottage cheese. Cassandra and Kirstie each worked on a batch, and did a wonderful job.
Cassandra and her sis are originally from Michigan but are currently residing in Cody. Cassandra lived in Hyattville for a couple months in 2016, so many of you met her as she helped in the Dairy for month. She did many things including painting, organizing and getting the store ready to open. During that time she also learned how to milk and make a variety of cheeses. The girls needed a little retreat and chose to come back for the weekend. We filled their day with plenty of cheese making and lots of smiles. Thanks so much for stopping by, girls! Products in the store this week include:
The "Sherry Cheese" is a Chevre cheese (soft cheese) but instead of made with goats milk it is made with our Jersey and Brown Swiss A2 cows milk. It's seasoned with Herbs de Provence making it the perfect treat to pair with sourdough bread, veggies, or spread on a cracker. Give us a shout on our email [email protected] if you'd like us to include any of these products with your weekly milk order or we can set them aside at the store for pick-up! Hope you all have a great week! ~Emma for Diamond S Delights We hope everyone got through that little wind storm OK! Not much you can do outside when the wind is blowing that crazy, so Emma and I decided to make a delicious baked ziti! We topped it with some fresh Diamond S Mozzarella cheese to make it extra special. This week we made a different kind of cottage cheese. Last time it was a traditional cottage cheese that took 4 days to make. This one we cultured with buttermilk and it will be done after about 24 hours (Tuesday). Mondays deliveries should email or text Kris by Tuesday night (June 13) and we'll get them dropped off by Wednesday. We also have more marinated feta and butter! Be sure to get bread ordered by Wednesday for delivery this Friday.
