In Hyattville this rainy day we will be hosting our 15th annual Cowboy Carnival.  These little ones all made pies for our annual contest.  It was a big day yesterday here at the ranch.  11 pies were created to share with the carnival goers for their desert, all with homemade crust and filling!  These kids worked hard and yes we don't waste what's left in the pan!
This week will be Craft's last week at the Bee.  Diamond S Delights will be dropping off milk and kefir their during the month of June anyway.  Then during July, August, September and possibly October you will need to let us know if picking up at the Bee is not convenient for you.  We too will be part of the CSA so will be at the farm picking up our share each week and delivering our specials for the week.  

This week we are delivering MONDAY,  and THURSDAY at the BEE.  What will be available is:
  • Ricotta
  • full fat Cream Cheese          Both on Monday
  • Cottage Cheese 
  • Blue Cheese Dressing         Both on Thursday

Wow what a beautiful weekend.  Hope you all enjoyed.

This week May 21st thru Sunday the 27th  both at the ranch store and at Bee Healthy we will have on the shelves lots of milk, both plain and chocolate..  Kefir too:  we make both plain and  Maple/Vanilla  and it will be available, read below if you are interested in creating your own.  Call us for grains!!
Other Raw milk delights you can order: 
  •  Cheddar Cheese aged 60+ days packaged in 8 oz packages
  • Three kinds of cheese curd - Garlic Chive, Hot Pepper & Plain order some of each & save $'s
  • Cultured Butter - please get on our list. 
  • Yogurt - plain Raw Milk Yogurt and Lebnah (a greek style Yogurt)  limited supply. Order ahead
  • Whipping cream 
  • Creme Fraiche 
  • Blue Cheese dressing 
Get your orders in early if you are not on our regular list or want to add anything extra by responding to this e-mail or texting 307-272-5334.  Orders would be appreciated by Wednesday morning each week.  Next week we will have:
  • Ricotta Cheese plain or seasoned with Basil and Oregano - order it the way you like
  • Shelly Cheese - that's a light cream cheese seasoned with Herbs de Provence, you can order this plain as well.
  • Give us your ideas for fresh cheeses - you help us plan our week with our milk for the week.

Alot of interest and questions about how we make our KEFIR, so here's the equipment and how we make it. Google this precious raw milk product and share what you find! This pic shows the colander we use. Fine mesh plastic not metal. We strain into a 4 cup measuring pitcher.   Just jogging until the kefir is drained and the grains are contained.  Stirring seems to break the grains up.  We like them to grow to about 1 T in size.  Using 2 or 3 Tablespoons should make 1 quart of kefir within 24 hours.  Just experiment and adjust.

Second pic shows the kefir being tapped on the pitcher until all is drained.  No stirring necessary. just tapping, unless you like your grains broken apart and in smaller pieces.  After all the kefir is run through the colander, we rinse the grains.  This makes a little milder tasting kefir.  

Many ways to do one thing right.  It just depends on your taste and how you like to do it.  Kefir is very forgiving and can withstand a lot.  Too much heat is not good.

This pic shows the size of a kefir grain.  This one is aprox 1 teaspoon in size.  It takes about three of this size to add to a pint of fresh milk.  24 hours later you will have kefir to enjoy plain or added to your favorite smoothie.

A little family time this week

Last weeks Lazagne shared with family and friends!  Made with Diamond S grass finished burger, ricotta, parmesan, cheddar and mozzarella cheeses, zucchini purchased from the Crafts at Bee Healthy sliced thin for our noodles.  It's always satisfying when we can whip up a healthy meal to nourish our bodies. And better yet to share with our friends and family.  

Get your orders in for the following.  If there is no name on the label please help yourself.  Envelopes available for payment, on the 10th at the Bee as I will be traveling to Omaha, NE for a funeral/family reunion!  The bitter sweet.
  • Blue Cheese dressing in 16 and 12 oz jars
  • Marinated Feta 1/2 pint, pints & quarts this week
  • HOT PEPPER cheese
  • Cottage Cheese
  • Cream Cheese
  • Sharp Cheddar aged 7 months 
  • Milk & Chocolate Milk   
  • Maple/Vanilla Kefir 
Milk production is picking up a little with the green grass, so if you haven't gotten on our regular weekly list for delivery in TenSleep and Worland or pickup at the ranch text 307-272-5334 or e-mail [email protected] for availability.  We fill all milk and kefir orders and use extra to make the special fresh cheeses and restocking the aging frig with cheese.
  • Mozzarella May 17th.  Taking orders in advance.
