Kris and Gene are expecting a new little grand baby just as 2018 begins, so the sewing machine has been added to the dairy! It's amazing all the similarities between cheese making and quilt making!!  One - you take a perfectly good product cut it all up then either press or sew it all back together into a completely new product!!  Both are relaxing and tend to be more of an art than a science.  Notice the 'mistakes' in the quilt,  that's what makes it one of a kind!

This week, on the dairy side, we will again be at Bee Healthy Friday (Nov. 3rd) 3:30 to 5:30 and will be sharing a great batch of cottage cheese, and two flavors of Shelly Cheese.  We will also have:

• Garlic and Chive pressed cheese
• 90+ day aged Swiss
• 6 Month aged Sharp Cheddar
• Small loaves Sourdough Bread ($3 ea.)

October 14th, we had the Wyoming gals and the Michigan gals working together to create two kinds of butter, both cultured and sweet cream.  We also made four kinds of cheese, beginning with cottage cheese, cheese spread, mozzarella and finishing with a pressed cheese.  From their comments I think a good learning time was had by all.  Two groups of three is a perfect size.  Please let us know if you'd like to get together with your friends or family for a cheese making experience.  We welcome your comments and presence at our very small micro dairy.  Come learn with us.  To your health and happiness, Kris for Diamond S Delights.

Hi Everyone!

As we transition from going to market every week to just delivering milk and other items to our specified drop-off point we wanted to remind everyone that your milk should be labeled with your name in the cooler. The milk will be delivered to WORLAND by 7am every Thursday and will need picked up before 3:30pm that same day. If these times don't work for you, let us know and we'll work something out! We'd like to hear from everyone by Tuesday as to what you will be needing for the week in order to plan ahead and make sure we have everything you'd like! If it's just your normal milk order and it is the same every week you don't need to give us a heads up, just for special orders or additional items with your normal order! For the TEN SLEEP delivery...no changes for you guys! Your delivery will be the same day and time as usual! We appreciate all of our milk customers and want to give you all a big THANK YOU for supporting our small local business!

Good Morning Everyone!

This Thursday will be the last day of Lloyd Craft's Market for us in 2017! We are so grateful for all of the wonderful customers/friends that have stopped by to say hi as well as purchase some of our dairy delights. If you have the chance come on by one more time and grab what you can while we're there. This week we have a fresh batch of ghee, marinated feta, aged cheese wheel, and mozzarella. Here are some pictures of how Emma and I used the Mozzarella last time.

First, roll out a sheet of puff pastry. After that, layer the bottom with tomato/pizza sauce and top it with some delicious Lloyd craft tomatoes. Finally, add on slices of our wonderful Mozzarella with a garnishing of basil.

After that we added parmesan cheese to fill in the gaps, and baked for 15-20 minutes. It was so delicious and can hardly wait to try it again.

We're sad that the market is coming to an end this week, but if you would like more dairy delights until next summer, be sure to contact us at [email protected], and we will make arrangements to get you your favorite dairy products.
