Hello all: This is a little plug for our upcoming Artisan Cheese class to be held in Wilson on August 5th. 10 am to 5 pm. Sign up extended to Friday, July 31st. It’s summer and everyone is so busy our heads are spinning. But we need to know numbers so get your name on the list at www.diamondsretreat.com/shop and hit the cheese class entry, or talk to Kathryn at Fish Creek Inn. We need those last few days to plan the food for the event. Lunch is provided. Nothing is quick with traditional foods. A lot of time and love go into the planning and preparing. We don’t use prepared mixes, we culture and use sourdough, as well as all the yummy raw milk products, like butter, sour cream, cream cheese to name a few that will be used for the meal, plus we have several kinds of cheese to taste. If you are interested in learning to make your own products from raw milk, or understanding the process and how healthful they are then please join us at “The Barn Healing Center” in Wilson on August 5th and let us hear from you so we can plan for the crowd. This event is scheduled and will take place, we just want to have plenty of samples and plenty of lunch for all of us. What I’ve made ahead of time for the last three months is Cheddar, Swiss, Havarti, Pepper Jack and Marinated Feta for you all to taste and or buy to take home. Aging cheese with our tiny operation is next to impossible but I’ve managed to hord over 15 pounds to bring to share with you all. Here at the Diamond S ranch we milk 2 cows as of July 15th. Miss Hannah calved early that morning. But as most of you know we run beef cows as our main business so besides supplying milk for 8 families we have a couple extra calves too. Very exciting when I come up with three gallons of milk that isn’t spoken for lately to make cheese with. Our milk for the class by the way is already spoken for closer to Wilson. We've purchased twelve gallons of fresh raw milk and it will be delivered to the Barn from Paradise Farms in Victor. Looking forward to seeing you all in a few short weeks.
