Pictured: Amelia's kiddos feeding one of the many twins this calving season! How about that weekend, everyone?! Ours was fantastic and we hope yours was too! We were able to fill in for Kris this weekend for the morning milking so her and Gene could get away for a day or two to celebrate their 44th wedding anniversary! If you see them, give them a big congratulations! Diamond S Delights would love to start supplying 4 to 5 families with yogurt every week! Order today (Monday) or tomorrow for delivery this week. We will have 2 quarts ($4 each) and 4 pints ($2 each) ready to go. Let us know what you'd like! Not only is this yogurt great plain but it is also a wonderful addition to your smoothies. Just add your favorite fruit for the sweetener. In the words of Kris, "working with raw milk is a daily learning experience." Sometimes the yogurt has more whey that rises to the top, sometimes it doesn't. This whey can be drained off so the yogurt is thicker however the whey is very high in protein. Sometimes Kris will add grass fed beef collagen &/or grass fed beef gelatin to thicken and add other health benefits. Diamond S has both on order from Azure for April. This month Diamond S will be trying to make our yogurt look more like what we all are used to buying at the grocery store by adding organic powdered cow's milk to thicken. The organic powdered coconut milk made the yogurt beautiful but it added the wonderful (to some, not so wonderful to others) flavor of coconut. So give the yogurt a try (or a second chance!) this week and let us know how you like it. Also available this week:

Hey Everyone!
Today is the first day of spring, and I'm sure you're just as happy to see winter go as I am. This week we have a great selection of Diamond S Delight products at our little store. In stock right now is: *(One) 11 oz wheel of Brie *(Four) 4 oz wedges of Brie We won't have any more brie until the first of September, so be sure to grab what you can ASAP! Call ahead and we can reserve it today. We also have available some fresh Swiss Cheese Curd! It is packaged in 0.75lb packages for just $8. Lastly, we have some Traditional Ricotta. Emma and I love using this in our lasagna, but it also goes great as a spread on bagels or toast. It's a little like cream cheese with a tang to it, seasoned with oregano and basil. So that's what we have available for you at the moment. Don't forget, this summer we will also have some aged cheddar, swiss, and some wonderful havarti. Speaking of summer, Kris has an exciting trip planned to Switzerland in July! Her trip is sure to be filled with a lot of adventure, and learning more about the art of cheese making. We are excited to see what ideas and delicious dairy products she comes up with when she returns. Further down the road, in March of 2018, we will have some homemade Parmesan available as well! Camembert cheese is ready to go now. The recipe is very similar to Brie and basically the only difference is the size of the mold used. As the Camembert (brie) ages the flavor will continue to develop. If you like a stronger flavored cheese, let it age in the fridge a few more weeks and then give it a try. We have a limited supply of butter available as well. It seems to go extremely fast so let us know if you'd like us to save you some. The butter is made by culturing cream with buttermilk for 48 hours then chilling it for 8 hours before churning it at 54 degrees F into sweet cream butter with many probiotic benefits from the culturing. Kombucha is in stock. For those of you who aren't familiar with kombucha, it is a fermented, lightly carbonated tea that has many health benefits. Since it is full of probiotics it helps to improve digestion, stimulates your immune system, and improve your mental clarity and mood stability. Kombucha is produced by fermenting tea using a symbiotic colony of bacteria and yeast (SCOBY). If you'd like to try your hand at making some of your own we have scobies available as well. They are needed to start the kombucha. Red Zinger Sauerkraut is ready for anyone wanting to enjoy some of that too! The sauerkraut is made with cabbage, beets, and ginger. It's the best sauerkraut I've ever tasted so give it a try, you won't be sorry! Also, don't forget, you can special order homemade sourdough bread made by Amelia and can buy eggs from her as well. Here's to hoping that Mother Nature makes up her mind and the weather gets a little better the rest of the month. At the store we have Hyattville honey for $11/quart that goes great in tea for these cold days! We have very little left, so be sure to grab yours today! Raw milk yogurt is available, so if that is of interest stop by the store or give Kris a call at 307-469-2204. Emma and I also got to try more of the garlic and chive cheese, as well as some of the hot pepper cheese that is available at the store. They go great with crackers, summer sausage, or just by themselves. The hot pepper is my favorite; just enough heat, but not so much it's hard to handle! If you're looking to incorporate the cheese into a dish you can also try some 'garlic and chive cheesy mashed potatoes.' Here are some easy instructions for a delicious side dish!
