If you're going to be visiting the Tetons or Yellowstone, you can make your vacation complete by learning to make your own cheese! The day includes a traditional whole foods meal with native wildcrafted tea from Jackson Hole.
Class will be held at The Barn Healing Center in Wilson, 6200 Heck of a Hill Road, Wilson, Wyoming, on August 5th, with the following schedule: 9 a.m: registration, payment of remaining 50%, and sampling 10 am: Class begins 1 pm: break for dinner 5 pm: Class concludes Class will be $100: 50% deposit due July 15th. Deposits or full payments can be made on our Shop page, or via drop off at Fish Creek Inn in Wilson.

Diamond S Ranch has been invited to travel and share a cheese making class in Jackson in early August. I'm excited but also a bit overwhelmed with what this is going to take to get all the supplies and equipment transported 300 miles away. Sharing what I'm doing here on the ranch with friends and colleagues is great, but gathering everything needed to share with a group in another town will be a challenge, but a doable one I'm sure. Not only will we make several products, watch for the posters in early July and respond so you can help determine what kind of cheese we all will make together. Also if you join the fun we will share a traditional meal at noon.
This past Wednesday we made two pounds of cheddar, the pressing took 36+ hours and is now drying so it can be waxed then aged. Last week Marinated Feta with 4 gallons. I do have 3 1/2 pints left of the Feta that was bottled yesterday, let me know if you want me to save you a jar. It is a favorite from "A Cheesemaker's Journey" by Mary Jane Toth. Come help me prepare for the upcoming traveling class, I will be making cheese twice a week on WEDNESDAY and SATURDAY. Plus each week includes making yogurt, butter and icecream. Ask the little kids in Hyattville what their favorite flavor is. Come join us at 9 a.m. Share with me what kinds of cheese or other dairy products you enjoy.
