We have exciting news! Within the last week or two Kris has been putting the finishing touches on aging Brie Cheese as well as Swiss Cheese! Both of these should be ready the middle of September and we are currently taking orders. Please let Kris now if you’d like us to reserve some for you. Brie cheese is a soft French cheese that takes 30-45 days to age. Swiss is a medium-hard type cheese and as most know it's the cheese with the "holes." Swiss takes about 3 months to age. So both cheeses take a lot of time and effort to make and we thank Kris for putting in all the hard work so we are able to enjoy the end product! We have a tentative product schedule for the coming weeks and it is as follows: Sept. 1st (this week) - Marinated Feta, French Style Soft Cheese Logs Sept. 8th - Mozzarella Cheese, Ricotta, and Butter Sept. 15th - Brie Cheese, Swiss Cheese, and Smoothies using fresh organic fruit that is in season. Other news around the dairy barn involves Miss Hannah. She was dried off yesterday in order to give her a period of rest before she is due to calve here in the coming months. Drying off means that she is no longer producing milk. In other words, Miss Hannah is on vacation until she calves! Hey Everyone, My name is Blaise Allen and I will also be helping Emma and Kris keep the blog updated and continue to show you new and exciting Diamond S Delights every week. I am from Meeteetse, Wyoming and love everything that has to do with the outdoors (hunting, fishing, camping, riding etc.). Besides spending time outdoors I also love to cook. I will occasionally be showing you some of the meals I cook using delicious Diamond S Delight products. Tonight I cooked Lasagna using farm fresh mozzarella, ricotta, and cottage cheese. Diamond S Ranch grass fed beef and homemade spaghetti sauce was also thrown in the mix! Along with the lasagna was a fresh garden salad with romaine lettuce, cherry tomatoes and diced radishes. After dinner I decided to try Kris' recipe that is similar to whipped cream. Fromage Frais is mixed with Creme Fraiche and a little bit of sugar topped over Diamond S organic lemon flavored yogurt and freshly picked apples. The meal was delicious! Some might already know me and others might not but I'll be trying to get a new blog up every week for Diamond S Delights to keep you all informed of everything going on. I'm Emma Green and I'm originally from a dairy farm in western New York. However, I live in Hyattville now and am enjoying helping Kris every week at Lloyd Craft Farms! It's great seeing everyone's interest in all the new products Kris has been making every week and it allows me to get back to my dairy roots. This week Diamond S Delights will have an assortment of delicious yogurts available! The flavors will be honey vanilla, lemon and two fruit varieties. Give Kris a call by Thursday, August 18th if you'd like us to set any aside for you.
As always, thanks for your interest in Diamond S Delights! It has been a very busy summer here at Diamond S Ranch! Lizzy, aka 'Jersey Girl,' calved and it was a bull calf. She is giving about 4 gallons of milk per day, however the calf gets about 2 gallons of that. Lila is still pregnant and a little ways off from calving, any guesses on what that calf will be? Kris continues to make some excellent dairy delights every week. Products include anything from butter to cheese, smoothies to sour cream, and of course milk and much more! Diamond S Delights has been invited to Lloyd Craft's market every Thursday. New products as well as customer favorites are being made every week. Below is a list of the items Kris will be taking this Thursday, August 11th. If you're interested in any of the above items for this week give Kris a call or shoot her an email to let her know. She'll set them aside for you.
