Happy New Year Everyone!
What a year 2016 has been for Diamond S Delights. The growth we have seen has truly been amazing and something we are extremely proud of. We couldn't have done it without all of our loyal customers! Thank you to each and everyone of you! 2016 brought the addition of Miss Bess, Miss Lizzy and Miss Lila to our herd, we were able to bring milk and products to Worland and participate at Lloyd Craft Farms, our weekly milk customers increased, and new cheeses such as Brie and Halloumi became hits! We are hoping that 2017 will allow us to continue to grow and produce new products. We are looking forward to our cheese and bread class in the very beginning of February. Who knows what the rest of 2017 will have in store for us! This week we are offering a buttermilk pancake kit. We'll provide you with the buttermilk and dry ingredients and all you will have to do is toss everything together! We have brie available this week as well. Give Kris a call if you're interested. Hey everyone! It's that time of year again and we hope you all have a very Merry Christmas! We have gift cards available if you are still searching for the perfect gift for your loved ones. Please contact Kris as soon as possible to get them before Christmas. Another option is to get some delicious homemade marinated feta. If by chance any of you get a gift of Marinated Feta Cheese for Christmas there are several great ways to incorporate it in your holiday dinner. First off, if the cheese disappears before all the extra virgin organic olive oil, never pitch it. It is great on veggies, poured over a roast before roasting, or used with the cheese on a salad. It makes a great dressing for your salad added with a splash of balsamic vinegar or just with the olive oil and spices all by itself. For Christmas dinner mix a large bowl of salad greens, toss in some crispy pecans soaked in cheese whey (recipes for crispy nuts of all kinds are in Traditional Cooking, by Sally Falon Moral). Chop up some of that wonderful Craft Farm cabbage, add an avocado or two and a hand full of sliced fresh strawberries or blueberries, and wal-laa you have a quick and delicious Christmas dinner salad. The Marinated Feta will keep quite a while on the counter. We've had it hidden for several weeks and it is still yummy; the whey settles in the bottom with all the spices and gets more flavorful the longer it sits. Now if you have a quart put just a little in a tiny jar to leave sitting out. Store the rest in the refrigerator up to six months. The oil solidifies in the fridge but when you put it on the counter it quickly becomes liquid again. ~Blaise I wanted to give a shout out to everyone who purchased our "meal bundle" a few weeks back! I also wanted to share with you the lasagna that Kristi Robison made with the ingredients. Not only are all the dairy products and ground beef from Diamond S but she even made homemade noodles to go with it! Thanks for sharing your creation with us Kristi! We love seeing what everyone is doing with the products they receive from us, so if anyone else would like to share what they are making that would be great!
Hey Everyone! We hope you all had a great Thanksgiving! Emma and I were happy to head East to New York and help out on her family dairy. Emma's parents have about 40 milk cows in upstate New York and we were lucky enough to help feed and milk them for several days. Here are a few pictures from the farm! This week we would like to recognize Amelia and her kids for helping at Diamond S Delights! Each week they help with making the delicious dairy delights we all love. Amelia is originally from New Zealand, and we are very thankful her family found their way to Hyattville. Besides helping with the dairy products, Amelia also makes some amazing sourdough bread. If you haven't tried it yet let us know and we will make sure to get some available for you. You can also sign up for our class on February 4th and learn how to make it for yourself! Below is a picture of Amelia and her beautiful kids. Thanks Amelia for all that you do! As I mentioned above, Diamond S is hosting a hands on class at the ranch on February 5th! We will likely include the milking experience for those that have little ones or any adults that are interested in where our food comes from, then we will share breakfast with those that get here before 9am. The class will begin at 9:30am and include several dairy recipes, to be determined by the response we get from our blogs on some of your favorites. So, what products would all of you like to make? Along with the sourdough bread making portion of the class we will also walk you through several traditional cooking recipes such as sauerkraut, other fermented vegetable recipes, apple cider vinegar and kombucha. We will share a late traditional lunch then finish up our projects, and close with a bubbly drink and a cheese plate. We would love for you to join us! This week we have marinated feta, hot and original cheese curds, ricotta, red-zinger sauerkraut and brie available at the store! Come on in and grab your dairy delights for the next holiday meal!
