We have a very important story to share with the Diamond S group today.

In the last month, we have brought a beautiful new milk lady into our herd. Sammy has come to us from Montana and is the biggest sweetheart!

In other news........

 While Diamond S Dairy is why you are here, our main Diamond S product is beef.   Our beef is grass fed and finished and as natural as possible without fillers and unneeded grains.  Below you'll find what's available from our freezers and the great prices that haven't been messed up due to "Covid".

• Ground Beef  $5/lb normally $6.00/lb
• Cube Steak - 1 lb. packages - $2.50 each
• Beef Bones - $2.50 packages 2 to 5 lbs (makes AMAZING bone broth!)
• Stew Meat - 1 lb. packages - $2.50 each

MISC. Meats:

• Liver - 2 lb. packages - $5 each
• Half Heart - $2.50 each
• Tongue - whole - $2.50

With all this talk of cheese, we've found a few lovely ways to incorporate it!

1- Slice up fresh pears, place a generous piece of Cactus Jack, Saddlestring Swiss, or Cowboy Cheddar on top and then sprinkle a few crispy walnuts or pecans on top.  YUM! Did you know nuts are more digestible if first soaked then slowly dried till crispy?  Another topic for  a future blog!

2- Kale (or any fresh greens) Salad - Chop salad in with apples, berries and cubes of any aged cheese, or Pheobe's Marinated Feta.  Whisk lemon juice, olive oil, garlic, and salt and pepper to taste and toss with your greens mix.  Top with some quality parmesan cheese and enjoy!

3- Creamy Broccoli - Chop and combine 1 head of broccoli, 8 crispy bacon slices, 1/4 cup red onion, 1/4 cup roasted almonds, and 8 ounces of Diamond S aged cheese.  Mix with dressing consisting of 1/2 cup mayo, 1/2 cup plain raw yogurt, 2T lemon juice, 1T sugar or honey, and salt/pepper to taste. 

The above recipes can be enjoyed on their own with with a nice glass of Bordeaux Red, aged Zinfandel, or a Malbec wine!

Diamond S Dairy is a busy operation this time of year!  We are working to make and age more cheeses and Wyoming is a challenging place to do so.  Cheese needs a higher humidity (75% minnimum) in order to age well.  Due to our summer being what it's been, that humidity has been tough to achieve and our cheese is resulting more on the sharp side.   

So if you love your cheese sharp, get on our list as our 60 pounds of aging cheese is disappearing!!  The fresh side of our dairy goods has picked up, too, so we've not been able to add to our aging room in several weeks.  Raw milk, sharper Diamond S cheese can be a wonderfully new experience for you!

Remember we have Cowboy Cheddar Cactus Jack, and Saddlestring Swiss. Exact weights are hard to cut from each wheel.  We will do our best to cut the weight you want, just let us know when and what size you want!

The word is out about our yogurt! 

Orders are increasing for our Plain Yogurt so we are now making it available every week if ordered by the Sunday prior to the delivery week.

Lemon Yogurt available this week!  Be sure to order early, we ran a little short this last week.  So we're making it again this week, and if your order was short this week it will arrive next week.

Monthly orders due for August this week.  We so appreciate the monthly orders, it helps us plan and get orders filled more efficiently.

Weekly orders due the Sunday prior to your Thursday thru Sunday Delivery/Pick-UP.  Weekly and late orders are filled as products are available. 

Kris has her hands full with her beautiful dairy cows!!  Thankfully, Alex the cat is around to assist...even when his help is not needed.
