Happy Monday! We hope everyone enjoyed their weekend, and perhaps made one of Diamond S Delights products a part of your weekend meals! Emma and I were very excited to see halloumi cheese back at our little store. Over the weekend we tried one of the best ways to cook halloumi -- Fried! Halloumi is a milder cheese, which means it is great to go as an appetizer with any meal. Here is the recipe we followed: Ingredients: 3 Tablespoons of Panko Breadcrumbs 1/2 lb of halloumi cheese sliced in 1cm thick pieces 1 Egg 3/4 teaspoon dried oregano Freshly ground black pepper 1 1/2 TBS plain flour 10-12 oz olive oil and some raw cultured Diamond S butter Instructions: 1. Pour oil and butter into a small pan or skillet. 2. After cutting your halloumi, coat slices in plain flour. 3. Whisk egg into small bowl and add the sliced, floured halloumi to coat with the egg. 4. Mix panko breadcrumbs on a small plate with dried oregano and a good grind of black pepper. Roll flour/egg coated halloumi in the panko mixture. 5. After coating with panko, add the slices of halloumi into the pan and fry for about 1 minute on each side (or until golden brown). 6. Serve as soon as all the cheese has been fried. Eat as is or dipped in honey. This week we have kefir available! We will be giving it away at the store this Friday and Saturday. Come to taste several flavors as well as kefir ice-cream! Bring your own bottle and we would like you to take home some plain kefir as a gift for coming out to the store. If you can't make it let us know at [email protected] and we will make sure to get it to you on one of our delivery days. If you are unfamiliar with kefir, it is a fermented milk product that tastes like a drinkable yogurt. Not only is it delicious, but also provides many health benefits. Kefir contains high levels of vitamin B12, calcium, magnesium, vitamin K2, biotin, folate, enzymes and probiotics! Here's also a picture of all the great health benefits from drinking kefir. What better to do on a rainy day than stay inside where it's dry and make cheese! This is what we have available in the store this week:
We wanted to give everyone a heads up about the Taste of Wyoming event that is happening in Basin on May 19th. Diamond S Delights will be there along with many other companies from around the basin. We'd encourage everyone to come and sample all the local products. So many vendors were there last year and we had a great time learning about what's available at our finger tips!

We hope you all had a wonderful Easter. Emma and I were so blessed and got to spend some time with Kris, her family and some great friends. Diamond S Ranch prime rib, ham, chicken, salad galore and many wonderful desserts made for an absolutely delicious meal. What was even better was the company! In store this week we have a variety of delicious products. We just finished packaging halloumi cheese. We also have plain yogurt and cultured butter available! Last night Emma made some amazing garlic bread, topped with some delicious Diamond S Mozzarella and fresh tomatoes. Here are a couple pictures for you to drool over. We love trying new and exciting recipes using Diamond S products, but we love it even more when you all share your pictures and recipes with us. A friend from Fromberg, Montana came all the way down to get a mixture of different cheeses to take home. She shared with us this delicious looking salad, topped with our local favorite-marinated feta. Take a look for yourself, and stop by the store to grab your jar today. It is $15/pint and $24/quart. Blaise Happy Monday everyone! I'm sure everyone is gearing up for a wonderful Easter weekend spent with family and friends. No matter if you are having a cook-out, egg hunts, or just sitting back and relaxing for a few hours we hope you enjoy yourselves! I wanted to share with you all what Blaise and I made with the Diamond S whipping cream. Saturday morning we decided homemade crepes would be delicious and what better to use the cream on! We whipped the cream until it was thick and let me tell you, it whipped so much better and quicker than anything I've ever bought from the store. Usually I have to stand there for 10 minutes until the store bought cream is thick enough. The Diamond S cream thickened right up in less than 5 minutes. I have a major sweet tooth so we sweetened it with some sugar and you could do the same with your sweetener of choice or just leave it unsweetened, which ever you like. Here is the crepe recipe we used:

This winter seems to be dragging out, but the kids made sure to make the most of it! Cedar and Lily brought their sleds to work with Momma this morning. Bridger is in helping bottle milk. Here's what Diamond S Delights has available for this week:
We have been making and selling butter like crazy! We have only a few pounds out of the latest batch that haven't been spoken for, so if you would like some contact us ASAP! It is $16 per pound for this Golden goodness. We also have made 3 pounds of butter into Ghee this afternoon. If you are not familiar with ghee, it is clarified, unsalted butter with the milk proteins removed. It has a high smoke point, making it perfect for cooking, and an incredible flavor. Many people who cannot tolerate dairy can handle ghee, so try yours today! It is said to keep on the counter 6 months - if it lasts that long. Three gallons of milk made five pints of cottage cheese $4 each, and four are still left as of this morning. Three pints of "Liquid Gold" (whipped cream) are also available at this time for $9/pint. We have also been busy bottling marinated feta today. This seems to be a local favorite so be sure to grab yours before it's all gone! $15 for a pint and $24 quart. Of course don't forget about the free range eggs in our little store- $3.50 dozen. While you're picking up eggs be sure to also put in your order for some delicious sourdough bread. To keep you updated, the cheddar has aged 4 months and is ready (3 pounds)! That's a lot of cheese, and we'll have more variety coming in the future. Currently we are making room in the aging cave for two more rounds of Swiss to be made at the end of this week. We hope you stay warm and dry.
