Happy Monday everyone! We sure are looking forward to labor day weekend and that extra day off! Hopefully you all have something fun planned with family and friends. We were excited to introduce one of our new cheeses last week. The Gouda seemed to have gone over well! We'd love to hear some feedback from those that tried it! We also have a Corn Pudding recipe that involves using Gouda. If you'd like it, let us know and we'll send it over! We'll be making a special Greek-style yogurt called Lebneh pronounced LEB-neigh. This yogurt will be simple and healthful not like what we find in our supermarkets - custardy and sweet. Try Lebneh with olive oil on toast (sourdough of course) topped with tomatoes & sauted onions with dried mint sprinkled on top. You can even use it in place of sour cream on a baked potato or try it on an English muffin with some honey drizzled on top. This week at the store we will have..... - Marinated Feta - Butter- sweet cream & cultured plus - this week we have poppy-seed/lemon try this served over fresh steamed veggies from Lloyd Craft Farm of course. - Swiss - Caerphilly (car- philly) - Gouda - Lebnah Yogurt We will also, once again, be at Lloyd Craft Farm on Thursday from 4- 6pm with an array of goodies! Enjoy the upcoming long weekend! ~ Emma for Diamond S Delights

Hey everyone,
Sorry for getting the blog up a little late. Emma and I drove to the Owl Creek Mountains to watch the Solar Eclipse yesterday. What a great experience and we hope you enjoyed watching it as well. This week we will have a special recipe for my favorite dessert, cheesecake. We have sour cream for sale, and will be taking orders for cream cheese as well. Let us know if you would like some and we will get you on the list. Not only that, but we will have a variety of hard cheeses available at the store and Lloyd Craft Farms this week. Cheeses include:
The girls have been great lately, and we are so thankful for the abundant amount of milk they produce. Miss Lizzy still hasn't had her calf, but we all (including Miss Daisy, Lila, and Belle) are anxiously waiting each morning. We will be weaning Hannah's two calves soon so she may join the girls at the barn too, depending on what the ultrasound tells us. We will keep you posted on all the latest happening, and hope to see you around! Blaise Hi Everyone! Last week at the market at Lloyd Craft Farms we brought along 6 different kinds of flavored butter. We had a lot of requests for the recipes so here they are, enjoy! These recipes were inspired by one of the walks Kris took in Switzerland. They spent a rainy cold morning on the beautiful Bettmeralp walking with a regional herbalist, Lisa. They had lessons with Lisa, then gathered their own wild alpine edible and medicinal herbs and met her at the bottom of the climb. From there they made their own salve from the herbs they had collected. About the time they finished the fog lifted and rain stopped and they could really see how absolutely beautiful Bettmeralp is. Lisa owns a restaurant in the town of Bettmeralp that is open in the winter for the skiing visitors and for special classes in the summer months so they got to enjoy a wonderful meal that she and her mother had prepared. A delightful spread with fresh cheese seasoned with the alpine edible flowers and the baskets of bread were served with yarrow butter. One of Kris' favorite days that she wanted to share with all of you. Kris didn’t have fresh yarrow but came up with the recipes above with things she did have. She will try from time to time to make special logs of butter, but in the mean time we hope you will try some of these recipes on your own with Diamond S butter and herbs of your choice and taste from the Craft Farm garden.

We will have provolone to taste, so everyone can enjoy a little! Twenty gallons of milk were made into Hot Pepper Jack cheese last week and will go into aging tomorrow, as well as 18 gallons of milk being made into provolone. We'll see you all Thursday at the Market. Enjoy your week. ~Emma for Diamond S Delights Hey everyone! Our fearless leader, Kris, if finally back from her wonderful trip in Switzerland. She had a fantastic time and learned a lot of new things. Along the way she also tried a variety of new foods, and found ways to make different types of dairy delights. We will be incorporating some of these new items and techniques in the weeks to come. Below are some more pictures of her adventure. Kris will be at Lloyd Craft Farms this Thursday, so be sure to stop by and say Hi when getting some product. This week we will have:
As always, thanks for your interest in Diamond S Delights!
