Happy Birthday Brody

Today is our oldest grandson's birthday and we are proud of him.  He is growing into a hard working young man. Cold days of branding this spring were several!  Hats off to Brody for toughing it out to the end.

More blessings soon.  Skylar will be out of school and helping us a couple days this summer.  Maygen will be back with us after her trip to California and Amelia will also be joining us first part of May from New Zealand.  So thankful for these young women for their talents.  Let's look around us and give encouragement to all the young people in our lives that are working hard to keep the family farm and ranch alive.  Thank you.

The orders are appreciated a head of time.  Thank you for stopping by last week and letting us know your favorites.  Much appreciated.  Helps us so much to make the fresh cheeses you enjoy.  Your feedback is invaluable to us.  We want to hear from you to make our recipes even better. What you like and what you don't - we will do our best to make what you like!  Mozzarella seemed to be a favorite on the 19th.  Not enough to go around, darn it.  This week another favorite was requested Kefir cheese.  Milk deliveries happen 4 days per week, and it takes 5 days of milk to fill the 4 days of deliveries, so we have two days of milk to restock the frig with aging cheeses and make your favorite fresh cheeses.  Feedback is what drives our daily activity.  Thank you.

Getting Swiss back in to age.  32 pounds ready mid July.
This week at Bee Healthy besides all of the great stuff on the shelves and the Craft's organic fruits and veggies we will be tasting at least four kinds of Diamond S cheeses, with Artisan Sourdough Bread.  Diamond S will be in the store from 10 am to 2pm, so  stop in early for some good tasting and picking up your goods!

Feast or famine!

Either too much of something or too little.  Isn't that the way our lives go.  Last week we had too little milk to make cheese this week the chiller is full.   Blessings to be counted.

The strength will come to get it done! With a smile I write these words and will hope for abundance this week.  Today two wheels of hard cheese will be created as well as a few pounds of mozzarella.  The maple-vanilla kefir is disappearing and will be doubled this week.  So sorry for those missing out. Chocolate milk too had a few mysteries that were figured out.  This too will be replenished at The Bee on Thursday.  Please text 307-272-5334 to place your order, or to let me know it was gone when you got there to pick up!

This week at The Bee look for:  Creme Fraiche
                                                                      Marinated Feta
                                                                      Blue Cheese Dressing
                                                                      Milk and Chocolate Milk Orders
                                                                      Maple-Vanilla Kefir Orders
                                                                      Cultured Butter Orders
                                                                      Mozzarella Cheese Orders
Sliced Sourdough Sandwich Bread Orders + extra loaves

Nothing like getting to hold your new grandson.  Such a happy little fellow that only fusses if he's hungry or needing a change of clothes.   Great Sunday, with the rain and snow stopping our projects outside we decided to take a drive to visit with sweet, smiley Jack.   Bruce, Jenny too. Great drive & cuddle time.  You know there is nothing like little ones - grand children and animals to ground us and show us how special life is.

Just a little bit about Diamond S cheese making - our raw milk is never heated high enough to pasteurize ( at least 146* & held for at least 30 min) the milk.  We make raw milk cheese of several kinds, including cheddar, parmesan, jack, kefir, creme fraiche, cottage etc.  All the good probiotic activity is still there.  We age some we bring some to you fresh.  But the process takes lots of milk and time.  So be patient while we replenish our supply.   And stay tuned for your favorites to be back.

Relaxing in the sun.  See Alex in the corner behind the hens.  They are best buddies.

Meet the three calves Miss Belle is raising at present.  Yes as some of you heard while picking up your milk, or reading last weeks blog post about Miss Belle calving, all our extra milk will be going to the extra calves we've gotten with more twins, toward the end our our calving season.  So until we lose a calf and can graft one of these little sweet ones, onto the cow loosing one we will be sharing all our extra milk.  This too is a blessing.  Sometimes it's just hard to see all our blessings right away!!
No worries for our regular orders-MILK, CREAM, KEFIR and FETA will be filled and deliverd as usual.  We will try and keep Blue Cheese dressing available and pints of Marinated Feta plus either Sourdough Sandwich bread or the Artisan Rounds of Sourdough, so place your orders and pick them up at Bee Healthy and see all the new items Janet is adding to her store and shop for all your fruits and vegies Thursdays with Lloyd Craft Farm.  Truly a one stop shopping Thursday at Bee Healthy.  Please comment here or let me know what products are your favorite and we will do our best to be back with your favorites.  Thank you so much for all your support.

And then there were 5.  We mean 5 fresh cows instead of 4!  Miss Belle in the lower corner on Easter (April Fools) Such a beautiful warm day.  Monday 4/2 - She waited until the temps dropped the wind picked up and snow was on the way to deliver her little red heifer.  30 minutes old and the little one gets her first bike ride.  Happy pair in the barn for the night.

Come visit us at the ranch anytime and see where your diary products are produced.
