March- In Like a Lion

3/7/2017

This weather has me thinking of the old saying "In like a lion, out like a lamb." Here's to hoping that Mother Nature makes up her mind and the weather gets a little better the rest of the month. In the meantime, on these cold and windy days, be sure to grab your choice of Diamond S Delight products and try some of our previously posted  recipes to make a delicious meal.

At the store we have Hyattville honey for $11/quart that goes great in tea for these cold days! We have very little left, so be sure to grab yours today! Raw milk yogurt is available, so if that is of interest stop by the store or give Kris a call at 307-469-2204.

Emma and I also got to try more of the garlic and chive cheese, as well as some of the hot pepper cheese that is available at the store. They go great with crackers, summer sausage, or just by themselves. The hot pepper is my favorite; just enough heat, but not so much it's hard to handle!

If you're looking to incorporate the cheese into a dish you can also try some 'garlic and chive cheesy mashed potatoes.' Here are some easy instructions for a delicious side dish!

  1. Placed washed & quartered potatoes in a medium pot, bring them to a boil and cook for 12-14 min until tender.
  2. In a small pot bring to a boil 1⅓ cup of milk with 2 smashed garlic cloves. Remove from heat and let the mixture stand.
  3. Drain and mash cooked potatoes using potato masher and hand mixer afterwards. Place potatoes back on the stove at medium heat, stirring constantly for 2 minutes until slightly dry, than remove from heat.
  4. Add to potatoes and mix together 1⅓ cup of milk mixture (-garlic cloves), 1/2 cup of Diamond S Garlic and Chive Cheese. 3 Tbsp of butter, ¼ cup of sour cream, 1 tsp of salt, ⅛ tsp pepper, 1 Tbsp of chives until well combined.
  5. Serve warm and sprinkle chives on top for garnish.

As Emma mentioned last week, Miss Daisy had her calf last weekend. She is such a sweetheart, take a look for yourself!

Good post again you two. Recipe sounds great Blaize. Thanks for snapping a picture when she was just a few days old, Emma, of of Miss Rosy as she was taken to Burlington yesterday. Yes she is going to have a good home with a first calf heifer(with lots of milk) that lost her calf. She will be two weeks old tomorrow, and was too big for their dog kennel so got to ride in the back seat of the pickup. They hope to keep her forever and make her into their family milk cow some day.
