We have exciting news! Within the last week or two Kris has been putting the finishing touches on aging Brie Cheese as well as Swiss Cheese! Both of these should be ready the middle of September and we are currently taking orders. Please let Kris now if you’d like us to reserve some for you. Brie cheese is a soft French cheese that takes 30-45 days to age. Swiss is a medium-hard type cheese and as most know it's the cheese with the "holes." Swiss takes about 3 months to age. So both cheeses take a lot of time and effort to make and we thank Kris for putting in all the hard work so we are able to enjoy the end product! We have a tentative product schedule for the coming weeks and it is as follows: Sept. 1st (this week) - Marinated Feta, French Style Soft Cheese Logs Sept. 8th - Mozzarella Cheese, Ricotta, and Butter Sept. 15th - Brie Cheese, Swiss Cheese, and Smoothies using fresh organic fruit that is in season. Other news around the dairy barn involves Miss Hannah. She was dried off yesterday in order to give her a period of rest before she is due to calve here in the coming months. Drying off means that she is no longer producing milk. In other words, Miss Hannah is on vacation until she calves!
