At a glance, you’ll see that Gene and Kris Robertson are busy ranchers. They have been ranching together in Wyoming for 48 years come the spring of 2021 and their experience shows in the nature of their operation. Ranching is in their blood and their love of the land and livestock is obvious to see. Beef cows being their main operation at Diamond S, they are focused on natural grazing and grass finished cows. In 2012, after many years of ranching cattle, Gene and Kris decided to add a dairy portion to their operation. Now beef, raw milk, cultured dairy and cheeses, and everything in between can be purchased from them. Anyone who tastes their products can agree they’re doing something amazing at the Diamond S Ranch!
Then you get a little closer, spend a few moments of your time at the ranch picking up your wonderful dairy and beef products, and you come to know some of the most amazing people! No matter the day, you’ll always have a smiling face greet you. Family oriented with their family involved in all areas of their life and ranch, from their kids to their grandkids, building fences to making cheese.
Who’s who? (how dairy was added to an all beef ranch)
Although a milk cow was a part of the family while they raised their own kids, Kris didn’t begin milking cows again until her grandchildren were born. It was at this time they remembered the true benefits of raw milk and began rescuing cows either from a friend that found the teats were too short to milk quickly by hand or from a young couple that didn't realize how much feed a cow really eats. But still, these cows were for personal use only.
The dairy portion of Diamond S. began in 2012 with one purebred Brown Swiss first calf heifer, adding the second Brown Swiss/Holstein cross cow late in 2013. Throughout the years several Jersey cows joined the little Diamond S dairy herd and the latest rescue being a purebred Guernsey.
Also in 2012, Diamond S was fortunate to host a book tour for Kristin Urdiales. Co-author with her mother, Annesse Brockley of AutoImmune the Cause and the Cure, they together also wrote several other books. Kristin taught us to make kefir, and shared her grains. We also made kraut together. One of her recipes that has become a family favorite, Kaptains Kraut. She became part of our family for several days. A turning point in our lives! Cleaning our house of all hydrogenated oils, processed and commercial foods, working towards eating a diet full of real foods made with natural ingredients, organic when we can. (This is still a work in progress, learning new and healthy things every year!) In 2014, Diamond S Delights began selling raw milk to those that reached out to us. Having extra milk always, we then began using a lot of the milk to make cheese. After breaking her leg in 2014 and dealing with complications for the following year, Kris found herself more confined to home and began making cheese. Lots and lots of cheese! And with cheese comes whey which she discovered was a wonderful yard fertilizer when spread with a hand sprayer.
From there, it was a hop, skip, and a jump across the ocean in 2017 for a trip of a lifetime to visit dairy farms in Switzerland learning about raw milk cheeses (Be sure to ask Kris about it sometime and she’ll tell you about the miles hiked and things she learned from cheeses to beekeeping!) As a result of this trip and years of practice, Diamond S now has many products to offer. Many are seasonally available, so when there is a lot of extra milk during the summer months, you know the cheese is in the making and you should claim some for yourself before it’s sold out! Who Moos? (Lets meet the cows!)
Every one of the milk cows has been tested to be assured they are giving us the best milk possible (A2/A2). Each heifer also has her own name and definitely has her own personality, too! Kris has worked hard to form a trusting bond with each. As the herd grows, as inevitably it does, Kris works to not only keep her own herd strong and healthy, but also has begun selling cow/calf pairs to families who are ready to begin their own dairy journey! You won’t find better milking heifers anywhere!
Who Milks, Who Processes, and Who Delivers?
While Kris spends her mornings (and the majority of her day some days) down at the dairy barn, she also has duties that haven't changed on the beef side of the ranch. Kris is first and foremost a wife, mom, grandma, and Rancher’s Wife and is still very integral in the operations of their cattle. So at any given time, you’ll see a variation of her, her grandchildren, neighbors, and friends jumping in to make everything work and make sure the Diamond S customers are well cared for.
